  • 6 slices bacon
  • 1 1/2 tbsp. butter, melted
  • 1 1/2 tbsp. maple syrup
  • 6 slices bread, crusts removed
  • 6 eggs
  • salt and black pepper
  • 6 tbsp. heavy cream
  • 6 tbsp. shredded Cheddar cheese

This dish takes 40 minutes from preparation to cooking. Follow this step-by-step guide and you’ll soon be serving a breakfast that even the fussiest foodie will adore:

  1. Using a deep skillet pan, evenly brown the bacon over a medium to high heat for approximately 10 minutes. Drain this on a paper towel on a plate. Once dry, crumble the bacon and put it aside for later. Preheat your over to 190 degrees and grease some muffin cups.
  2. Using a small bowl, combine the melted butter and maple syrup. Now use a rolling pin to flatten a piece of bread and brush the bread with the butter mixture. Line the muffin cups with the flat bread slices and then insert into the preheated oven for 3 – 5 minutes until the bread is crisp.
  3. Now take the crumbled bacon and sprinkle it into the bottom of the toasted cups. Then crack an egg into each as well. Once your eggs are in, season them with salt and pepper, dependant on taste preferences. Now add a tablespoon of heavy cream, as well as one tablespoon of cheese. Return them to the oven and bake for a further 10 – 14 minutes, until egg whites are set.

  • 125g of fresh, softened, goat cheese
  • 2 tbsp. chopped sundried tomatoes
  • 5 large fresh, chopped, basil leaves
  • 5 kg beef tenderloin/filet mignon roast, cut into 2 x 250g steaks
  • 1/4 tbsp. kosher salt
  • 1/4 tbsp. freshly ground pepper
  • 1 diced 1/4-inch slice of diced pancetta (approx. 56g)
  • 1 small finely chopped shallot
  • 1/2 cup Cabernet Sauvignon red wine

This delicious dinner takes 40 minutes from preparation to cooking:

  1. Using a small bowl, mix together the basil, sundried tomatoes and cheese. Season the meat with salt and pepper to taste and then put these aside.
  2. Use a medium heat with a large skillet pan, pop in the pancetta and cook until it is crisp. You’ll need to remove it with a slotted spoon and set it aside too.
  3. Now place the steaks into the hot pan, which should still contain the pancetta drippings. Vary the time it stays in the pan based on your preferred cook, 3-4 minutes per side (rare, medium, and well done). Once done, take it out and let it rest.
  4. Now in order to make the sauce, return the pancetta to the skillet and add the shallots. Turn the heat to medium-high and add the red wine to deglaze the pan. Scrape up any brown bits from surface of the pan and reduce the heat in order to let the mixture simmer until slightly reduced.

Now serve and enjoy the succulent steaks topped with the goat cheese mixture and sauce from the skillet.
