Mushroom Lover’s Pie
This recipe is easy to prepare and contains no meat.
This is what you’ll need:
1 punnet mushrooms
1 tin cream of mushroom soup
2 tablespoons mustard
2 tablespoons chopped rosemary
Pre-made pie crust
Step 1. Coat a pan with cooking spray and heat. Add mushrooms and cook for approximately 12 minutes or until browned. Add the remaining mushrooms and cook before adding half cup of water until evaporated. After the water has evaporated add the rosemary, mustard and season.
Step 2. Preheat the oven to 180°C. Place pie crust on a baking sheet spread the mushroom mixture over the pie crust.
Step 3. Bake for 15 minutes then reduce heat and bake for a further 45 minutes at 180°C. Cool for 10 minutes before serving.
Sweet Potato Black Bean Burger
This burger is easy to prepare, has a unique flavour and is bound to impress vegetarians and meat eaters alike. Now everyone can enjoy a hearty burger.
2 cups sweet potato
1 cup salted black beans
1 cup diced green onions
1 tablespoon paprika
1/4 salt and pepper to season
1 tablespoon brown sugar
Step 1. Cut sweet potatoes into chunks and bake in the oven at 180°C.
Step 2. Add black beans to a mixing bowl and mash. Then proceed to add the cooked sweet potatoes followed by the cooked rice, spices and onions.
Step 3. Add the sweet potato and black bean mixture to a baking tray. Pack mixture into patties, the thicker they are the more cooking time they will require. Bake at 180°C till done.
Step 4. Serve on fresh buns with salads or salsa.
Slow Cooked Potato And Corn Stew
This is the easiest stew you’ll ever make! Keep warm and toasty in the winter chill with this tasty dish.
5 large diced potatoes
1 cup frozen corn
3 tablespoons all-purpose flour
6 cups chicken stock
1 tablespoon oregano, 1 tablespoon thyme
1/2 tablespoon garlic powder, 1/2 tablespoon onion powder
2 tablespoon butter
1/4 tablespoon cream
Step 1. Mix potatoes and corn into a slow cooker. Add the flour and stir.
Step 2. Stir in chicken stock, oregano, thyme, garlic powder and onion powder.
Step 3. Cover and cook on high heat for 7-8 hours on medium heat, or 3-4 hours and high heat. Stir in butter and cream and serve immediately.
